Vegan Vanilla Cake with Chocolate Frosting

Vegan vanilla cake
- 1 ¾ cups all purpose flour (220 g)
- 1 cup white granulated sugar (200 g)
- 1 tsp baking soda
- ½ tsp Salt
- 1 cup non-dairy milk eg. soy milk, almond milk, etc (240 ml)
- 2 tsp vanilla extract
- ⅓ cup Vegetable oil or any other flavorless oil eg. canola, sunflower, soybean etc (80 ml)
- 1 tbsp distilled white vinegar or apple cider vinegar
Vegan chocolate frosting
- 1 cup cup unsalted vegan butter or margerine, room temperature (if you're using salted, skip adding the salt)
- 2 tsp vanilla extract
- pinch of salt
- 4 cups icing sugar (additional ½ cup to adjust to your desired sweetness and consistency)
- ⅔ cup vegan milk plus 2-3 tablespoon extra to reach desired consistency
Make your vanilla cake
Line your 7 inch baking pans with baking sheets.
In a mixing bowl, sift the flour, baking soda and salt. Add the sugar mix together.
In a measuring cup, mix vegan milk, vinegar, vanilla, and oil. Pour it into the flour mixture and whisk until just combined.
Divide the batter evenly between your two lined cake pans.
Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Cool cake in the pans for a couple minutes before transferring them to a cooling rack to cool completely.
Make your chocolate frosting
Add the vegan butter into a large mixing bowl. Sift the cocoa powder and icing sugar. Add the vanilla extract, salt and half the vegan milk to the bowl.
Start mixing it together at slow speed, gradually increasing speed until it’s smooth.
Add the rest of your vegan milk and mix until smooth. Taste and add icing sugar and/or milk until desired consistency is desired.
Make a smaller 6 inch cake by halving the cake and frosting recipe.
