Thai Peanut Noodles

Transform a bowl of noodles into a nutty, flavoursome dinner with this peanut noodles. Make it as spicy or as mild as you like and serve with a fried egg.

Ingredients

For broccoli

  • cups broccoli florets (235 g)
  • 1 tbsp vegetable oil

For sauce and noodles

  • 2 pack dried noodles
  • 2 tbsp sesame oil
  • 2 plump garlic cloves, minced
  • 1 tsp freshly grated ginger
  • cup peanut butter, smooth (83 g)
  • ¼ cup soy sauce (I used Lee Kum Kee Premium Dark Soy Sauce)
  • ¼ cup warm water
  • 1 tbsp chili sauce (I used Sriracha)
  • 1 tbsp lemon juice (about ½ a lemon)
  • ½ tbsp brown sugar
  • 1 red sweet chili, thinly sliced
  • pinch of red chili flakes
  • ¼ cup roughly chopped peanuts
  • 1 tbsp chopped parsley, for garnishing

Instructions

  • Boil a pot of water and cook your noodles according to the instructions on the packet. Drain noodles.
  • Put a pan on medium heat and add oil. Add broccoli and cook for 3 minutes, covered. Season with a sprinkle of salt and pepper if preferred. Remove from pan.

Make the sauce

  • In a bowl, stir your peanut butter, soy sauce, water, chili sauce, lemon juice and brown sugar. Stir until smooth and combined.
  • Heat 3 tablespoons of sesame oil over medium heat. Add garlic and ginger and cook for a 1 minute.
  • Reduce heat to low. Pour peanut butter mixture into the pan. Stir gently.
  • Add your cooked noodles to the sauce and toss with a tong. Tip in the red chili, most of the chopped peanuts, red chili flakes and broccoli. Toss everything well until combined.
  • Garnish with chopped parsley, leftover chopped peanuts, and sesame seeds. Serve immediately.
