Salmon Spinach Pie

This classic pie in a golden puff pastry is nothing short of wholesome. Make this comforting dish using the speediest option; a store bought, all-butter, ready rolled puff pastry.

Ingredients

  • 3 salmon fillets, cut into 1-inch cubes (360 g)
  • 2 tbsp lemon juice (30 ml)
  • ½ onion, thinly sliced
  • 1 cup sliced mushrooms (100 g)
  • 1 cup spinach, packed (30 g)
  • 2 tbsp unsalted butter (28 g)
  • 2 tbsp flour (30 g)
  • ¾ cup milk (180 ml)
  • ¼ tsp salt
  • a pinch of black pepper
  • 2 puff pastry sheets

Instructions

Pre-bake base of pastry

  • Pre-heat your oven to 190°C.
  • Line a 7 inch square pan with one pastry sheet. Bake for 15 minutes. Let cool.

Make filling

  • Add lemon juice to your cubed salmon. Let stand for 5 minutes.
  • Melt butter on a pan on medium high heat. Cook the mushrooms until brown, about 3-4 minutes. Add onions and cook for 1 minute or until translucent.
  • Reduce heat to medium low. Sprinkle flour and stir to combine. Slowly pour in the milk and stir. Simmer for 2 minutes.
  • Add your salmon to the mushroom sauce and let cook for 3 minutes. Turn the heat off and let cool.

Complete pie baking

  • Pre-heat oven to 190°C.
  • Tip in the salmon pie filling into the cooled, pre-baked pie base. Cover pie with another pastry sheet and bake until the crust is slightly brown, about 20 minutes.
