- 3 salmon fillets, cut into 1-inch cubes (360 g)
- 2 tbsp lemon juice (30 ml)
- ½ onion, thinly sliced
- 1 cup sliced mushrooms (100 g)
- 1 cup spinach, packed (30 g)
- 2 tbsp unsalted butter (28 g)
- 2 tbsp flour (30 g)
- ¾ cup milk (180 ml)
- ¼ tsp salt
- a pinch of black pepper
- 2 puff pastry sheets
Make filling
Add lemon juice to your cubed salmon. Let stand for 5 minutes.
Melt butter on a pan on medium high heat. Cook the mushrooms until brown, about 3-4 minutes. Add onions and cook for 1 minute or until translucent.
Reduce heat to medium low. Sprinkle flour and stir to combine. Slowly pour in the milk and stir. Simmer for 2 minutes.
Add your salmon to the mushroom sauce and let cook for 3 minutes. Turn the heat off and let cool.
