Salami Minestrone

This classic Italian soup gets an upgrade of flavour from salami slices. Make this wholesome winter warmer with any beans you love.

Ingredients

  • ½ tbsp olive oil
  • 150 g salami, roughly chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 700 g passata (or 800 g crushed tomatoes)
  • 2 cups chicken stock (500 ml)
  • 2 cups water (500 ml)
  • 4 tbsp tomato paste
  • 400 g canned butter beans, drained
  • 100 g spaghetti, broken into pieces (about 1 inch long)
  • 2 tbsp parmesan, grated
  • 2 zuchini, cubed (380 g)
  • 1 carrot, cubed (70 g)
  • 1 red bell pepper, cubed (95 g)
  • 1 cup packed kale, roughly chopped
  • ½ tsp Italian herb
  • ½ tsp black pepper
  • ¼ tsp salt

Instructions

  • Heat oil over medium and cook salami for 30 seconds. Add onion and garlic and cook for 1 minute until onion turn translucent.
  • Add carrots, zucchini and cook for 3 minutes.
  • Add crushed tomato, chicken stock, water, tomato paste, butter beans, salt and pepper. Stir. Simmer gently for 20 minutes, covered.  
  • Add kale and simmer for 3 minutes.
  • Add pasta and cook according to time in pasta packet MINUS 1 1/2 minutes.
  • Stir in parmesan. Taste and season with salt and pepper if necessary.
  • Serve with parsley, grated parmesan and warm toasted bread.
