  • 280 g spinach (or your favourite leafy greens eg. watercress, rocket, lettuce, arugula, etc.)
  • 4 tbsp olive oil
  • 2 tbsp vinegar
  • cup roughly chopped nuts
  • ¼ tsp salt

Instructions

  • Whisk together vinegar, olive oil, salt and pepper.
  • Toss through spinach along with chopped nuts.
