Pecan Chocolate Chip Cookies

This Famous Amos inspired recipe is so easy to make and has the crunchiest texture and deep toffee flavour that makes you forget store-bought ones!

Ingredients

  • 250 g unsalted butter, room temperature
  • 250 g light brown sugar (1 ¼ cup)
  • 1 tsp vanilla essence
  • 1 free-range egg, large
  • 80 ml vegetable oil (⅓ cup)
  • 300 g all purpose flour (2 ½ cup)
  • 61 g corn flour (½ cup)
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp salt½
  • 100 g dark chocolate chips (1 cup)
  • 160 g chopped pecans (1 ⅓ cup)

Instructions

  • Stir together butter and sugar with a spatula in a big mixing bowl until its well mixed.
  • Add vanilla essence, egg, and oil. Mix vigorously until smooth.
  • Sift all the purpose flour, corn flour, baking powder, bicarbonate of soda, and salt into the mixing bowl. Stir until combined.
  • Tip in chocolate chips and chopped pecaks into the bowl and fold until just mixed.
  • Chill in the fridge for at least 30 mins.
  • 10 minutes before you take out your cookie dough, heat the oven at 150°C on fan. Ball your dough into 1 inch golf balls and arrange on pans lined with baking sheets.
  • Bake for 15 minutes. The cookies are done when they are firmly set, lightly browned and leaves no imprint when you touch them with your finger.
  • Keep cookies fresh in an airtight container.
