- 75 g Any mushroom (about 1 cup)
- 60 g Plain flour, in a container with lid (½ cup)
- 1 egg beaten in a big bowl
- ½ cup breadcrumbs, in a container with lid
Preheat the oven at 180°C (356°F)
Place mushrooms in the container with plain flour. Put thelid on and shake the container until all the mushrooms have been coated. Carefully tip the mushrooms into a sieve and shake excess flour.
Dip the mushrooms in beaten egg until well coated, then transferthem into the container with breadcrumbs. Put the lid on and shake to coat themushrooms well.
Place panko coated mushrooms on tray with parchment paper. Grill in the oven for 12 minutes. Shake the tray halfway through to get even browning.
Serve with rice and katsu curry or just with hot sauce.
