Mushroom Katsu Curry

A clever shortcut that will make you forget takeaway. These meaty mushrooms soaks up the flavourful katsu curry to perfection.

Ingredients

  • 1 tbsp oil
  • 2 onions, thinly sliced
  • 350 g mushrooms, sliced
  • 2 medium carrots, cubed
  • cups water
  • 1 pack S&B curry sauce roux
  • 1/2 tsp black pepper

Instructions

  • Put oil on medium high heat and fry onions until it turns translucent. Add carrots and fry for 2 minutes.
  • Add mushrooms andcook until all the moisture that comes out from the mushrooms has boiled away. This will take about 3 to 5 minutes.
  • Add water and curry block. Simmer on medium heat for 5 minutes.
  • Taste and season accordingly. Serve with white rice and panko-baked mushrooms.
