Chicken & Leek Pie

With minimal ingredients, you can still make an impressive pie, and this recipe is here to prove it. Creamy chicken filling with leeks and salami, you can't go wrong with this recipe.

Ingredients

  • 800 g chicken thighs and legs about 4 pieces
  • ½ onion, chopped
  • 1 bay leaf
  • ½ tsp freshly ground black pepper
  • 2 cups milk enough to cover chicken in pan
  • 6 slices salami, quartered
  • 2 tbsp butter (28 g)
  • 2 leeks, sliced into ½ inch discs
  • 3 tbsp plain flour
  • 3 tbsp Dijon mustard
  • 2 sheets puff pastry (2 x 375g packs)
  • 1 egg, beaten, for glazing
  • 1 tbsp grated parmesan, to sprinkle on top

Instructions

  • In a large saucepan, add your chicken, black pepper, and bay leaf. Pour enough milk to cover chicken. Bring to boil and simmer for 25 minutes until the chicken is cooked.
  • Meanwhile, melt butter on medium heat in another pan. Cook onion until translucent and tip in your salami and cook for 1 minute. Add sliced leeks and cook for 4-5 minutes, until they are soften.
  • When your chicken has cooked, flake the chicken meat into your leek and salami pan. Discard chicken bones.
  • Add flour and stir. cook for two minutes then add milk through a sieve. Add Dijon mustard and constantly stir to make a thick sauce. Cook for 7-8 minutes. When it is thick enough, it will coats the back of a spoon. Turn the heat off and let cool.
  • Pre-heat the oven to 200°C/400F/Gas 6.
  • Roll out your puff pastry sheets to a rectangular shape. Lay the filling on one sheet, leaving 1 inch of border bare. Cover the pie filling with the second sheet and crimp the edges.
  • Brush your pie with a beaten egg and sprinkle grated Parmesan on top. Bake in the oven for 35 to 45 minutes until golden.
