Cheddar Scones

- 250 g self raising flour (2 cups)
- 60 g chilled unsalted butter, cubed (¼ cup)
- 2 tsp baking powder
- 1/2 tsp salt
- ¼ tsp cayenne pepper
- 1½ tsp mustard powder
- ¼ tsp coarse black pepper
- 100 g mature cheddar, finely grated, plus 50g grated for sprinkling on top (1½ cup)
- 120 ml milk (½ cup)
- 1 egg, large
Preheat the oven to 180°C (356°F). Line the baking tray with baking paper.
Mix flour, baking powder and salt. Add butter and quickly rub it together with your hands until it resembles tiny cornflakes.
Mix in grated cheddar and all the spices and stir well. Make a well in the middle of your bowl.
Crack the egg and pour milk into the well. Bring the sticky dough together.
Scrape dough onto a clean, well floured surface. Shape it into a log, cut it in half, then divide each half into 4.
Shape each dough into a ball and flatten them. Place them on the lined baking tray. Brush with milk and sprinkle the rest of the cheddar. Bake in the oven for 10 to 15minutes or until golden.
Serve on its own or with butter.
