Beef Pad Kra Pao (Thai Holy Basil Stir-fry)

Ingredients

Rice

  • 1 cup uncooked rice
  • 2 cups water

Beef stir fry

  • 2 tbsp vegetable oil
  • 350 g minced beef
  • 2 tsp cornstarch
  • 5 cloves garlic, minced
  • 10 birds eye chilies, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp oyster sauce
  • 3 tbsp fish sauce
  • ½ tsp sugar
  • 1 cup Thai holy basil leaves (packed)
  • 4 eggs optional

Instructions

Cook your rice

  • Put water and rice in a pan. Put the pot to boil and cover with lid. Once the water goes into a rolling boil, simmer on low heat with the lid on.
  • After simmering for 13 minutes, rice should be cooked. Tilt pan to check that all water has been absorbed. Turn the heat off and fluff the rice. Remove from heat and cover with lid for 10 minutes.

Fry eggs

  • Heat your pan on high and add oil. Fry eggs if using. Set aside on a plate.

Make beef stir fry

  • Put the same pan back on medium heat. Tip in garlic and chopped chilies. Fry until fragrant, about 30 seconds.
  • Add minced beef and stir vigorously to break up the clumps. Cook for 3 to 4 minutes until just cooked through.
  • Mix all the sauces with cornstarch and tip it into the pan along with sugar. Stir and let simmer for a 2 minutes.
  • Tip in basil leaves to wilt. Serve with rice and egg.
