Air Fryer Raspberry Brownies

Wonderfully moist brownies with intense cocoa flavour. Its minutes to make with ingredients perhaps already sitting in your kitchen cabinet.

Ingredients

  • 115 g unsalted butter (1/2 cup)
  • 125 g dark chocolate, chopped and divided in half (I used 60%cocoa solids) (about 1 cup)
  • 113 g granulated sugar (1/2 cup)
  • 43 g dark brown sugar (1/4 cup)
  • ½ tbsp vanilla extract
  • ¼ tsp salt
  • 2 large eggs, beaten room temperature
  • 35 g all-purpose flour (1/4 cup)
  • 30 g unsweetened cocoa powder (1/4 cup)

Instructions

  • Line the brownie pan with baking sheets. Fold a piece of aluminium sheet just enough to cover the top of air fryer basket without touching the brownie batter.
  • Preheat the air fryer to 175°C (347°F) for 5 minutes.
  • Combine butter and half of chopped chocolates. Melt them gently in hot water bath or microwave. Once melted and smooth, leave to cool.
  • Add sugar, salt and vanilla. Stir thoroughly.
  • Whisk in the beaten eggs and stir to combine.
  • Sift flour and cocoa powder into the batter and stir until just combined. Do not overmix.
  • Fold in the rest of chopped chocolates and raspberries.
  • Pour batter into brownie pan and bake for 40 minutes in the air fryer.
